Nutty Bites of Joy Recipe: Healthy, Raw, Vegan, Delicious and Nutritious

by Pilar Bueno

Thursdays are the days I put aside to be creative with my group of artistic friends. There is nothing like sharing your passions with like-minded people, whilst having a good catch up and putting the world to rights.

Today is my turn to host the "Crafty Witches Coven", as we fondly call ourselves, and I thought I would treat them to some healthy snacks.

The "Nutty Bites of Joy" (or "Balls of Joy", as we call them at home!) are so delicious and rich in flavour that you don't need many of them to satisfy your sweet cravings.

There is no cooking required so none of the nutritional value of the ingredients is lost in the process of making them. They contain no refined sugars, saturated fats or animal-derived products and they really do taste that amazing! On top of it, they contain 3 powerful Sirt Foods: Cocoa, Medjool dates and Walnuts. Read more about what Sirtuin Activators proteins can do to improve your health in our book Sirt Foods: The Secret Behind Diet, Healthy Weight Loss, Disease Prevention, Reversal & Longevity

The main ingredient is Dates, which is a fantastic source of minerals, vitamins, fibre, calcium, iron, phosphorus, potassium, magnesium and zinc. This particular type of date (Medjool) is very sweet with a deep flavour that combines beautifully with the cocoa giving it an almost real taste of chocolate. A powerhouse of nutrition, it is fantastic for giving you a boost of energy when you most need it.

INGREDIENTS:
  • 2 cups Pitted Medjool Dates
  • 1 cup of Chopped Mixed Nuts
  • 1/2 cup of Ground Almonds
  • 1/4 cup Unsweetened Cocoa Powder
  • 1/2 cup Unsweetened Shredded Coconut, plus extra for rolling
  • 1/4 tsp. Himalayan Pink Salt
  • 1 1/2 tsp. Vanilla Extract
  • 1 1/2 tbsp. Coconut Oil
I would always recommend that you use organic ingredients or at least the best quality you can afford. I buy a lot of my nuts, seeds and superfoods from the online store Buy Whole Foods Online, as they have a great range of organic products at competitive prices.

A note on Vanilla: I always use 'Extract' and not 'Essence' or 'Flavour'. This is because Vanilla 'Extract' is a natural product made by soaking vanilla pods in a mixture of ethyl alcohol and water, whilst Vanilla 'Essence' is a synthetic version, in other words, chemically produced. This is the reason why Essence is always cheaper.
The shocking revelation though is the Vanilla 'Flavour'. You might want to sit down before I tell you that artificial flavourings like vanilla are made from the anal secretions of a beaver. Yeap, you read it right: Beaver Butts! Castoreum is the name of this chemical compound that mostly comes from a beaver’s castor sacs and has rather interestingly a musky, vanilla scent... Yum.

And with that lovely thought in our heads, let's get "cooking".

METHOD:

Process dates in a food processor until they form a ball.

Add the rest of the ingredients and process until evenly blended. If you have a powerful food processor you can use whole nuts. I particularly like my blend to have chunks of nuts as it adds a more interesting texture, but if you dislike this, you can always use ground almonds instead.

Roll the mixture into bite-size balls and to finish them off by rolling them individually in shredded coconut.

You can store them in the refrigerator for up to two weeks but I doubt they will last more than a couple of days!

They make ideal snacks when you need a boost of energy or to accompany any hot drink. I shall serve mine with an infusion of wild chamomile that I collected from the mountains of Southern Spain last year.

HEMP & CBD EXPO - Get 50% off - First ever event in the UK: Birmingham NEC March 2nd & 3rd 2019

by Pilar Bueno

Get 50% Off Your Entry Ticket Below

We are living in historic times as medicinal marijuana is becoming more mainstream acceptance in the UK and worldwide.

Hemp and Cannabis-based products are flooding the market and available to buy online and health food stores as “Food Supplements”. Who would have thought, a few years ago, that some cannabis-based products would be available on prescription as medicinal cannabis here in the UK!
A small selection of Chakanna's products

Hemp is a variety of the Cannabis Sativa plant species, specially grown to make a variety of industrial and commercial products such as food, clothes, paper, rope, and even eco-building materials. It is one of the oldest crops and it is incredibly sustainable as not only it grows very quickly, it requires little maintenance, does not need pesticides, it naturally regenerates its own soil and, quite incredibly, every single part of the plant can and is used. We are great fans of Hemp at home and we even make our own hemp milk (see our "Dairy Alternative: Hemp Milk" blog entry).

RECIPE - Make Hemp Milk in Under 5 Minutes

The recreational and medicinal marijuana (cannabis) whilst also deriving from the Cannabis Sativa plant, is a different strain and it has its unique composition and use.
Cannabidiol (CBD) is a naturally occurring compound found in the resinous flower of cannabis, a plant that for thousands of years has been used for its medicinal properties. A safe, non-addictive and non-psychotropic substance (does not make a person feel "stoned" or "intoxicated"), it continues to be tested and confirmed for its therapeutic properties by scientists and medical professionals around the world.

If you would like to find out more about Hemp and Cannabidiol (CBD), what it can do for you and how it can transform your life, Birmingham is hosting the first dedicated Hemp and CBD event in the UK this weekend (March 2nd – 3rd 2019) at the National Exhibition Centre (NEC).

You will be able to attend a variety of seminars (30 to choose from) talking about a range of topics and have your questions answered by the expert speakers. You will be able to buy, taste and sample products from more than 110 exhibitors to include CBD oils, superfoods, cosmetics, building materials, clothing, paraphernalia, and medicinal ointments and balms.

Ticket price is normally £30. But you can get 50% off your entry ticket by entering this promotional code CBDMIRR50 when you buy your ticket online. You will also receive a FREE bottle of CBD oil, a Free copy of their Hemp & CBD Magainze and an Expo Goody Bag.
What are you waiting for? Book your ticket now!

My favourite breakfast to start my day.
Freshly grown #BroccoliSprouts on homemade bread, a little hemp oil, cayenne pepper, turmeric & black pepper and the special hack to maximise and activate the #sulfurane in the broccoli, a little sprinkled English mustard powder.

By the way, dogs love broccoli sprouts, it is an easy and cheap way to add valuable nutrients to your pooches meals.

An inspirational and uplifting morning at the Birmingham Vegan Festival

A Cruelty-Free, Vegan Day Out
by Pilar Bueno

For the last 10 years or so now, both John and I have been strong advocates of Green and Healthy living and we rejoice on the realisation that we are incredibly lucky to be able to make a living sharing our lifestyle, our passion and respect for nature, gaining knowledge and experience as we continue to evolve and learn to live more ethically and sustainably.

I will not lie to you that at times it gets tiresome to be looked at as a freak and questioned endlessly about our life choices and particularly dietary intake.

‘Yes, I do get enough protein (plant protein that is, that I get from the “source” which incidentally is more bioavailable than animal protein)’…,
‘No, I am not malnourished’ (and my latest blood tests results can vouch for that)….,
‘No, I don’t just eat lettuce’ (as a matter of fact, I probably get more variety and nutritionally rich foods in a day than most people would have in a whole month!).

Our visit to the Vegan Festival at the Edgbaston Cricket Grounds in Birmingham on Saturday 14th April was just what the doctor ordered. An event that filled us with positivity and inspiration, seeing all wide selection of delicious foods, creative crafts made out of recycled or otherwise waste materials and such enthusiasm and passion for a Cruelty-Free Life. Inspirational talks and lots of information was at hand, in order to allow us to make informed choices about improving our health, becoming aware and preventing animal cruelty and protecting our environment for us and future generations.

You’d be forgiven for thinking that the place for full of “lentil-munching hippies”, “feeble looking sandal-wearing weirdos dressed in hemp” shouting for animal rights. Gone are the days of these stereotypes, instead we were delighted to be amongst healthy looking people, engaged, informed and interested in ways to enhance their consciously Healthy and Ethical life choices.

Veganism has taken social media by a storm. Veganuary inspired people to try being Vegan for the month of January (and throughout the rest of the year). It is undeniable that there is a huge shift towards plant-based diets and everything indicates that this is not just as a fad but it is here to stay.

Food Revolution shares some very interesting statistics on their website, such as the fact that in the UK, the number of Vegans has increased by 350% compared to 10 years ago. It fills me with great hope because the choices you make don’t just affect you; they have a wider effect on other people, the animals and our whole planet.

The £3 ticket event in Birmingham was all in aid of Farplace Animal Rescue, a charity based in Bishop Auckland with a mission to rescue and re-home abandoned animals and also to create environmental improvements for all the animals via education.

If you think a Vegan Festival is not your scene, think again, because this proved to be a great day out for us. You can bring all the family, they even have a children’s area so the kids can play safely while you go and sample some of the goodies on sale. What follows is just a handful of what we experienced:

Who says that if you are Vegan you are missing out? OR … you can’t indulge in delicious treats?

I thought I had died and gone to heaven! There were so many stores tempting you with delicious looking treats for those of us with a sweet tooth. Amongst them, Scrummy Crumb stood out for the large selection of cakes on display and their great smiles (I would be smiling too if I were surrounded by all those yummy vegan treats!). Based in Hull, they are a small family run business that I hope will take the Vegan world by a storm. Their delicious bakes can be ordered on Etsy which will deliver your purchase straight to your door. Anyone for cake?

I can highly recommend their chocolate brownies and Cherry Bakewell slices. I dared anyone to tell the difference between these vegan options and the “real thing” – Amazing.

Plastic Free and Zero Waste

John and I are making conscious decisions every day to reduce, reuse and recycle everything in our lives, and in the process, to avoid at all cost buying products that are made out of plastic or come packaged in plastic. An incredibly hard task because everything seems to be overly packaged in the supermarkets – my bugbear being cucumbers wrapped in those obscene clear plastic sleeves… Arghhh

I know we all try to do our best to recycle plastics at home, but as we all know, not all types of plastics are recyclable and end up in landfills in our oceans and take thousands of years to decompose, all the time leaking pollutants into the surrounding soil and water and killing the wildlife. If you saw David Attenborough’s Blue Planet II television series, you will be aware of the devastating threat that we are facing.

So don’t just recycle, try to avoid plastic in as many aspects of your life as you can. For instance, why not change your standard toothbrush for an eco-friendly one?

You might not know that your toothbrush is made from polypropylene plastic and nylon bristles (both non-renewable fossil fuel sources) and that around 50 million pounds of plastic toothbrushes end up in landfills every year in the USA alone – those are staggering numbers!

That is why we opted to buy an environmentally friendly bamboo toothbrush from Zero Waste Club.

I have been after one of these for a while but I wanted to make sure that my money went to an ethical company. I love their ethos and fully support their entrepreneurial spirit and passion to help save our planet. Their Replaceable Head Bamboo Toothbrushes are very innovative, simple yet beautifully designed and very importantly 100% Biodegradable. They are made from Sustainable Bamboo, a plant that grows super-fast in close proximity to each other (over 3 feet every day!)

The bristles are Bisphenol A (BPA) free and recyclable. I love the fact that I only have to replace the Head of the toothpaste generating, therefore, less waste (not that it will be wasted really, as it will help to “feed” my composter). They use plastic-free packaging for all their mail orders and all “unavoidable” packaging is 100% recyclable. On top of it, Zero Waste Club will plant a tree for every item you purchase!

If you want to explore more ways in which you can reduce your waste, take a look at Going Zero Waste website

Natural Beauty

I am always on the lookout for companies that provide natural, chemical and #crueltyfree cosmetics and personal hygiene products, that I can recommend in my Green Up Your Beauty Book. Today, I was in for a treat as the selection was wide, but in particular, one company stood out for me.

Siobhan is the woman behind The Artisan Soap Shack. They produce an incredible range of 100% Natural, Organic, Vegan Soaps and Organic Beard Oils, all handmade here in the UK.

Siobhan proudly tells me “We don’t Test on animals, We Test on our Friends! And I can tell that her fortunate circle of friends are more than willing to be her “guinea pigs” because the soaps are fantastic. I have tried the Oatmeal and Shea Butter soap with Frankincense and Clove Leaf. It has a beautiful subtle fragrance and leaves your skin lovely and soft.

Siobhan tells me she is currently working on a new Solid Shampoo, so watch out for the new product range coming into the market by visiting her website.

You Will Not Miss Meat

Seitan’s Grill is a travelling Vegan Burger Grill that offers very exciting meat-free fast food meals, all 100% homemade from organic produce from local suppliers, wherever possible.

We had the most amazing Pulled Jackfruit chilli with a “quick-as” chilli sauce and a delicious Seitan sandwich. Their seitan burgers are by far the best we have ever tried. We purchased some pre-packed ones to cook back at home the following day, only wishing we had bought more.

Liam and his Seitan Grill will go far. His passion and enthusiasm are contagious and a force to reckon with. Thanks for such an amazing meal – like your logo says “tasty as hell”!

And because we needed to “wash down” our meal with a cold beverage, we headed straight to the Red Moon Brewery stall for a Hand Crafted (Chemical Free) Ale. Those of you who know me well, know that I am always partial to a swift half, and here I found my new brand: “Poison’s Pleasure”.

Their brewery is based in Birmingham but the great news is that they are currently in negotiations with Amazon to delivery their handcrafted beers directly to your door.

Arts and Crafts

For the creative minds and those that like to wear unusual accessories and jewellery, the Vegan Festival is a treasure cave. You will be amazed at the creativity, genius ideas presented, all made from recycled and repurposed materials. Handbags, Belts, earrings and an endless list of beautiful creations made with cork, electric wires, inner tubes and old tyres! Check out Paguro Upcycle

Conservation in Action

Last, but not least, was a group of heroes under the name of Sea Shepherd who are campaigning hard to end the appalling destruction of our ocean wildlife and habitats. As a registered marine conservation charity, they rely on volunteers and word of mouth to carry their message and help them raise funds to continue their vital work. Please visit their Facebook page, like, share or even join their group of volunteers.

Have we got your interest? If so, I hope you will be tempted to visit a Festival soon. For all enquires about future Vegan Festivals, visit their Facebook page or email them at festivals@farplace.org.uk

Pilar and John

SIRT FOOD cover design

Hi everyone, I need some help. I've recently been tweaking and editing all our covers in our catalogue. When I look back at some of the early design disasters from last year, I bloody cringe.

The final cover I've decided to modify is back to the first book released, SIRT FOOD.
The original cover has gone through several modifications until I settled on the recent edit B. This morning I decided it needed a fresh feel, cover A is the result.
Simple question, which do you prefer?

If you could leave either A or B or a more detailed comment I'd really appreciate the feedback. Thanks J

Decided on this cover

VIDDA KITCHEN - COOKING CONVERSION CHART

Recently I've been asked by several people about weight conversions for cooking. If I'm honest I never remember and have to check on-line. So I decided to design a simple reference chart to print out and stick to the fridge door. I hope you also find it useful.

Use the Force start Sprouting Microgreens

Extract from the imminent release 'How to Save Yourself' by J. Hodges

During all my years of research into health and nutrition, studying the beneficial and healing benefits of a plant-based diet. I've had to confront the startling reality that the diet I had previously known was saturated in pharmaceuticals, pesticides, and herbicides, artificial sugars, and salts and all this was sold to me, and you by a corrupt, deceptive self-serving monster of an industry. The food industry literally plays God with our health because in 'them we trust'. Thankfully it seems the tide is turning and populations are waking up to the dangers served up on their plates.

Your health starts with what you put into your body via the whole in your face, it's that simple. Saying that, the human body is extremely efficient in the short term dealing with toxins and substances it doesn't recognise. One of our bodies favorite responses is to wrap these toxic molecules in fat cells and store them away out of harms way. You might recognise this process when you look into the mirror and wonder why the six pack you imagined to be hiding underneath your clothes, like rippled, firm, wet sand on a shoreline of a tropical ocean actually looks more like the bloated torso of that special uncle that only turns up at family weddings and is always found passed out in the car park.

You can cheat and deceive yourself for decades but eventually, the overloading of your aging immune system will bite you in the ass. Youth is the great deceiver, charming you with flattery and a feeling of immortality. When things get a little wild the hand of youth picks you up from your faltered place, dusts you off and sends you on your way, the bullets of life deflected by its very presence.

BUT.........all those takeaway meals, booze soaked holidays and weekends and a fridge stocked full of beautifully packaged delights awaiting the microwave and a TV soap will ALWAYS get you, eventually.

Trust me I know!!!

I know for sure that I'm not divulging a great mystical secret from the fountain of youth. Everybody knows that eating a low nutrient, processed food is not good. But is has surprised me how few people with serious health problem realise that poor diet is the main cause of the majority of disease. Many will say "Oh but it's also genetic and my family has a history of this disease" [fill in the blank]. This does play a part but those genes have to be in an environment to express themselves into the manifestation of that disease. It's like saying, "I have a toaster so therefore it's inevitable that I will die from electrocution". Sure create the environment, ie; take a shower with the plugged-in toaster and yes you will be lite up like a cheap Christmas tree all because you owned a toaster. Create a dangerous environment and bad things happen.

The same goes for our health and bodies. You create a toxic sewer for your cells and they will turn into a hungry crap eating monsters that will consume you. Your DNA needs a wide spectrum of organic nutrients every day to keep the molecular integrity and to function safely and effectively within your body. We are not taught this at all. It should be part of the educational curriculum from the first days of schooling. But then we'd have a population of informed people who weren't addicted consumers to the food and pharmaceutical industries, draining societies resources and empowering the ruling elite, perish the thought!!!!

Ok, so that's enough of my sarcastic rantings. How do you start to change a lifetime of bad dietary habits and clean up and repair your failing body?

Nothing makes more sense to me than adding sprouted micro greens to your diet. Microgreens are the sprouted seeds of common vegetables and legumes, such as broccoli, kale, lentils and mung beans. All the live enzymes and nutrients needed to make a fully mature plant is all encapsulated in a tiny seed. All you need to start the growth process is the add the miracle medium H2O and a little warmth and of the go, LIFE. Every few days from out of my simple sprouter (see below) I can eat a garden full of broccoli plants, sunflower greens, and succulent mung beans by the handful, all vibrant and alive, bursting with chlorophyll, vitamins, minerals. We add them to just about every meal. Fantastic thrown into a hot soup sprinkled on pasta and rice dishes and heaven in any type of sandwich. I never cook with them because the heat quickly destroys the nutrients.

Sprouting microgreens is an amazing and simple way to get maximum nutrition, very cheaply and very easy to do. Your body will thank you as you replace and provide the molecules your body is literally dying for. If you are suffering from the common maladies of our society, asthma, arthritis, diabetes, cancer, high blood pressure, heart disease etc, etc it's time to address the diet you're feeding your immune system. Why do you need to suffer when the remedies can be on your plate.

This way of treating disease is about fixing the whole failing system and not just the symptoms that are destroying your health that is prescribed with toxic, expensive pharmaceuticals with horrible side-effect and an alarming fatality statistic Pharmaceutical Drug Deaths

I hear all the time "it's too expensive to eat healthily". This is insanity!!! The better nutrients you absorb through your diet the less you feel hungry, the less food you need to buy. Plus it's really easy to grow your own food which is guaranteeing your own healthcare.

If you're constantly snacking or thinking of your next feeding time then your body is crying out for nutrition. Once satisfied the body turns that nutrition into high quality, slow release energy that lets you be a creative, happy and healthy human being and not 24/7 hungry!!!

Our overweight society is actually dying of malnutrition. You can eat ten pizzas a day washed down with donuts and cola but all your getting is empty, useless calories, with lots of toxins thrown in for good measure and a huge credit card debt. These toxins are conveniently and most often addictive. How lucky for the junk/processed food industry. A customer base addicted to their products and a pharmaceutical industry that supplies the food toxins and then, in turn, gets the follow-on sales of over the counter prescription medicines US Drug sales Aug 2015

Your body wants to be healthy and it can repair and rejuvenate. I've witnessed the amazing transformation in chronic health conditions, even in people in their 80's just by a change to a predominately plant based diet.

Kids love the whole process of germinating the seeds, they have a garden to tend on the windowsill. It's a great way to get them to eat healthier because they can be involved in the process and it fits into today 'quick, on demand' zeitgeist.

If anyone wants to know more please feel free to drop me an email or leave a comment below. I've also attached the banner below for the company I use for my supplier of Heirlooms, non-GMO sprouting seeds.
